When honey is pasteurized, the heat destroys many of the nutritional benefits, and intense filtration removes much of the “good stuff” like bee pollen. That’s why honey that has been filtered will have a clear amber color instead of a more cloudy appearance. Clear means that much of the beneficial ingredients have been removed!
